1) There are a few ways to do this. The simplest option is to use the blur tool to get rid of small blemishes or inconstincies. For large blemishes or warts etc, you can copy/paste a difference piece of skin with similar tone over it and them blur it in. Lighting up certain areas can also help to make up for bad lighting. Just remember not to add too much, or it takes away from the natural coloring.

2) You have to consider it on a gradient. It will always be a gray scale, you can not burn in color, but if you are simply making it a little bit darker, it will still retain it's natural color with a darkening effect.

3) Modeling pictures have a great advantage of being taken in very clean environments with makeup, etc which is specifally used because of it's ease to modify and exentuate, so don't kick yourself if your pictures don't look like those. A lot of it comes down to lighting as well, which also is involved in the original photography, but which you can also do to some extent in photoshop. Besides that, removing blemishes like in your first question can help, as well as isolating them and using backgrounds that compliment their features, drawing out their eyes/lips, etc.
