create a duplicate layer of your image by dragging the layer in the layers pallet to the new layer icon.

with the layer selected, click Image%26gt;Adjustments%26gt;Hue/Saturation

drag the Saturation slider to the far left and click "ok"

In the layers pallet, make sure you are on the Black and White image, and press the "add layer mask" button at the bottom of the layers pallet.

Select the brush tool from the tools pallet and make sure your color is set to black. With masks, black is kind of like erase and white is re-fill.

color the section you want to knock through black.

If you want to make edits later, be sure you are selecting the layer mask and not the layer. The layer mask is the white box that appears right next to the layer image in the layers pallet.

Hope this makes sense :)
